A delightful Chicken Kabsa bursting with warm spices and tender chicken, perfect for family gatherings.
Ingredients

- 1 whole chicken
- 2 cups of long-grain rice
- 2 onions, chopped
- 2 tomatoes, pureed
- 2 teaspoons of tomato paste
- 1 spicy chili, chopped
- 2 bay leaves
- 1 teaspoon of black pepper
- 1 teaspoon of cumin
- 1 teaspoon of coriander
- 1 stick of cinnamon
- 1 teaspoon of curry powder
- 3 cups of water
- Olive oil
- Raisins
- Lemon, sliced
- 2 teaspoons of salt
Instructions
- Soak the rice in water for 25 minutes, then rinse and drain.
- Heat olive oil in a large pot over medium heat.
- Cook the chopped onions until translucent.
- Add the cinnamon stick, bay leaves, black pepper, and salt.
- Cut the whole chicken into quarters and brown it in the pot.
- Stir in the pureed tomatoes and tomato paste.
- Add chopped chili and cumin, then pour in the water.
- Cover and simmer for about 1 hour.
- Check the chicken’s internal temperature to ensure it’s at 165°F.
- Add the rinsed rice and curry powder, mixing thoroughly.
- Pour in just enough water to cover the rice and bring to a boil for 10 minutes.
- Reduce heat and cook for another 10 minutes until water is absorbed and rice is tender.
- Serve with chicken on top, garnished with raisins and lemon slices.
Notes
Serve family-style for the best experience; enjoy with pita or flatbread.
