Description

A quick and delicious Chicken Lo Mein recipe, perfect for busy weeknights, featuring tender chicken, vibrant vegetables, and savory sauce.

Ingredients

Scale
  • 34 boneless, skinless chicken breasts
  • Lo Mein noodles (fresh or dried)
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 2 carrots (thinly sliced)
  • 2 green onions (chopped)
  • ¼ cup low-sodium soy sauce
  • 1 tablespoon sesame oil
  • 3 cloves fresh minced garlic

Instructions

  1. Gather all your ingredients. Start by chopping the vegetables into bite-sized pieces.
  2. Cook the Lo Mein noodles according to the package instructions until they’re al dente. After cooking, drain them and set aside.
  3. Heat a large skillet or wok over medium-high heat. Add a splash of oil and sauté the chicken until it turns golden brown and cooks through, about 6-8 minutes.
  4. Remove the chicken from the skillet and set it aside.
  5. Add the chopped bell peppers, carrots, and green onions to the skillet. Stir-fry these vibrant veggies for about 3-4 minutes until they’re tender yet still crisp.
  6. Return the cooked chicken to the skillet. Add the cooked Lo Mein noodles, soy sauce, sesame oil, and minced garlic. Toss everything together gently to combine.
  7. Serve hot! Drizzle more soy sauce over your dish if desired.

Notes

Use fresh ingredients for the best flavor and don’t overcook the noodles to maintain their texture.
