Ingredients
Scale
- 3–4 boneless, skinless chicken breasts
- Lo Mein noodles (fresh or dried)
- 1 red bell pepper
- 1 yellow bell pepper
- 2 carrots (thinly sliced)
- 2 green onions (chopped)
- ¼ cup low-sodium soy sauce
- 1 tablespoon sesame oil
- 3 cloves fresh minced garlic
Instructions
- Gather all your ingredients. Start by chopping the vegetables into bite-sized pieces.
- Cook the Lo Mein noodles according to the package instructions until they’re al dente. After cooking, drain them and set aside.
- Heat a large skillet or wok over medium-high heat. Add a splash of oil and sauté the chicken until it turns golden brown and cooks through, about 6-8 minutes.
- Remove the chicken from the skillet and set it aside.
- Add the chopped bell peppers, carrots, and green onions to the skillet. Stir-fry these vibrant veggies for about 3-4 minutes until they’re tender yet still crisp.
- Return the cooked chicken to the skillet. Add the cooked Lo Mein noodles, soy sauce, sesame oil, and minced garlic. Toss everything together gently to combine.
- Serve hot! Drizzle more soy sauce over your dish if desired.
Notes
Use fresh ingredients for the best flavor and don’t overcook the noodles to maintain their texture.
