- 1 lb boneless, skinless chicken breasts
- 2 cups diced potatoes
- 1 cup carrots, chopped
- 1 cup celery, chopped
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp butter
- 1 cup frozen peas
- 1/4 cup fresh parsley, chopped
Instructions
- In a large pot, melt 2 tablespoons of butter over medium heat. Once melted, add the diced onions, carrots, and chopped celery. Sauté these veggies until they soften up, which takes about 5–7 minutes.
- Next, stir in the minced garlic and cook it for an additional minute.
- Add the chicken breasts, diced potatoes, chicken broth, dried thyme, salt, and black pepper to the pot. Bring everything to a gentle boil, then reduce the heat. Let it simmer for about 20–25 minutes until the chicken cooks through and the potatoes are tender.
- Carefully remove the cooked chicken from the pot, shred it using two forks, and return it to the soup.
- Now, stir in the heavy cream and frozen peas. Let the soup simmer for another 5 minutes.
- Don’t forget to garnish with freshly chopped parsley before serving.
Notes
Serve with crusty bread or buttery biscuits for a complete meal. Store leftovers in the fridge for up to 4 days, or freeze for up to 3 months.
