Description
A warm and comforting soup featuring tender chicken and fluffy quinoa, perfect for chilly days and family gatherings.
Ingredients
Scale
- 1 cup quinoa, rinsed
- 1 lb chicken breast, diced
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 garlic cloves, minced
- 6 cups chicken broth
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Heat the oil: In a large pot, heat the olive oil over medium heat. Let it warm up for about a minute.
- Sauté the veggies: Add the diced onions, sliced carrots, and sliced celery into the pot. Sauté until they soften, which should take around 5-7 minutes.
- Cook the chicken: Stir in the minced garlic and diced chicken. Cook everything until the chicken turns golden brown, which takes about 5 minutes.
- Combine ingredients: Add the rinsed quinoa, chicken broth, dried thyme, and a sprinkle of salt and pepper. Mix everything together until combined.
- Simmer: Bring the mixture to a boil. Once it bubbles, reduce the heat to simmer. Cover the pot and let it cook for 20-25 minutes until the quinoa is fluffy and the chicken is tender.
- Serve and enjoy: Pour your warm soup into bowls, serve it up, and enjoy!
Notes
For added flavor, consider garnishing with fresh parsley or a sprinkle of grated cheese. Store leftovers in an airtight container for up to 4 days or freeze for 2-3 months.
