Description

These protein balls capture the flavors of cookie dough without any guilt, making them a perfect healthy snack for any occasion.


Ingredients

  • 1 cup almond flour (or oat flour)
  • 1/2 cup vanilla protein powder (whey, casein, or plant-based)
  • 1/4 cup cashew butter (or almond/sunflower seed butter)
  • 23 tbsp milk (dairy or non-dairy)
  • 1/4 cup mini chocolate chips (plus extra for topping)
  • 2 tbsp honey or maple syrup
  • 1 tsp vanilla extract
  • Pinch of salt
  • 1 cup milk chocolate chips
  • 1 tsp coconut oil (or vegetable oil)

Instructions

  1. In a medium bowl, whisk together the almond flour, protein powder, and salt.
  2. In another bowl, stir together the cashew butter, 2 tablespoons of milk, honey (or maple syrup), and vanilla extract until smooth.
  3. Pour the wet mixture into the bowl with your dry ingredients. Mix until it forms a cohesive dough.
  4. Gently mix in the mini chocolate chips.
  5. If the mixture feels too dry, add more milk until the dough is slightly sticky but firm.
  6. Roll the mixture into 1-inch balls and place them on a parchment-lined plate.
  7. Refrigerate the balls for at least 30 minutes.
  8. While the protein balls chill, microwave the milk chocolate chips and coconut oil in 30-second intervals until smooth.
  9. Dip each protein ball into melted chocolate, tapping off the excess.
  10. Sprinkle additional mini chocolate chips on top and place them back on the parchment paper.
  11. Refrigerate for another 15-20 minutes until the chocolate has set.
  12. Enjoy these protein balls chilled and store them in an airtight container in the fridge for up to a week.
