- Prepare the yogurt mixture: In a large bowl, combine the chopped strawberries, plain Greek yogurt, honey, and vanilla extract. Mix thoroughly until everything is well blended.
- Form the clusters: Scoop out about 2 tablespoons of the yogurt mixture and place it on a parchment paper-lined baking sheet or plate. Aim to form about 10 clusters.
- Freeze the clusters: Place the yogurt clusters in the freezer until completely solid, which should take about 1 to 2 hours.
- Melt the chocolate: In a microwave-safe bowl, combine chocolate chips and coconut oil. Melt them in the microwave in intervals, stirring until the chocolate is fully melted and smooth.
- Coat the clusters: Take each frozen yogurt cluster and dip it into the melted chocolate. Ensure that each cluster gets a thorough coating, then place it back on the baking sheet.
- Final freeze: Return the clusters to the freezer for a few more minutes to harden the chocolate coating. After that, serve and enjoy these delightful treats!
