Delicious Chunky Monkey Granola combining flavors of peanut butter, bananas, and chocolate for a perfect snack or breakfast.
Ingredients

- 2 cups rolled oats
- 1 cup mashed ripe bananas
- 1/2 cup peanut butter
- 1/4 cup honey or maple syrup
- 1/2 cup chocolate chips
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cup chopped nuts (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the mashed bananas, peanut butter, and honey (or maple syrup) until smooth.
- Add the rolled oats, cinnamon, and salt, then mix well to combine all the ingredients.
- Stir in the chocolate chips and the chopped nuts if you choose to use them.
- Spread the mixture evenly on the prepared baking sheet.
- Bake for 15-20 minutes, stirring halfway through until golden brown.
- Allow to cool completely before breaking into clusters.
Notes
Store in an airtight container at room temperature for about one week. Can be frozen for up to three months.
