Description

Delicious Chunky Monkey Granola combining flavors of peanut butter, bananas, and chocolate for a perfect snack or breakfast.


Ingredients

  • 2 cups rolled oats
  • 1 cup mashed ripe bananas
  • 1/2 cup peanut butter
  • 1/4 cup honey or maple syrup
  • 1/2 cup chocolate chips
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the mashed bananas, peanut butter, and honey (or maple syrup) until smooth.
  3. Add the rolled oats, cinnamon, and salt, then mix well to combine all the ingredients.
  4. Stir in the chocolate chips and the chopped nuts if you choose to use them.
  5. Spread the mixture evenly on the prepared baking sheet.
  6. Bake for 15-20 minutes, stirring halfway through until golden brown.
  7. Allow to cool completely before breaking into clusters.

Notes

Store in an airtight container at room temperature for about one week. Can be frozen for up to three months.
