Description
A vibrant bowl packed with marinated steak, zesty lime, creamy avocado, and fresh veggies.
Ingredients
Scale
- 1 lb steak (flank or sirloin)
- 2 tablespoons olive oil
- 2 tablespoons lime juice
- 1/4 cup fresh cilantro, chopped
- 2 cups cooked rice or quinoa
- 1 cup black beans, rinsed and drained
- 1 cup corn (fresh or frozen)
- 1 avocado, sliced
- 1/2 red onion, diced
- Salt and pepper, to taste
Instructions
- Marinate the steak: In a bowl, mix together the olive oil, lime juice, chopped cilantro, salt, and pepper. Add the steak, making sure it’s well-coated in the marinade. Let it marinate for at least 30 minutes.
- Cook the steak: Once marinated, heat your grill or skillet over medium-high heat. Grill the steak for about 4-6 minutes on each side, depending on your desired doneness.
- Rest the steak: After grilling, remove the steak from the heat and let it rest for a few minutes.
- Assemble the bowls: Start by adding a base of cooked rice or quinoa in a bowl, followed by black beans, corn, diced onion, and avocado. Top with sliced steak.
- Serve and enjoy: Add a sprinkle of additional cilantro and serve with lime wedges.
Notes
Feel free to experiment with toppings like jalapeños or diced tomatoes.
