Ingredients

  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 1/4 cup fresh cilantro, chopped
  • 2 cups cooked rice or quinoa
  • 1 cup black beans, rinsed and drained
  • 1 cup corn (fresh or frozen)
  • 1 avocado, sliced
  • 1/2 red onion, diced
  • Salt and pepper, to taste

Instructions

  1. Marinate the steak: In a bowl, mix together the olive oil, lime juice, chopped cilantro, salt, and pepper. Add the steak, making sure it’s well-coated in the marinade. Let it marinate for at least 30 minutes.
  2. Cook the steak: Once marinated, heat your grill or skillet over medium-high heat. Grill the steak for about 4-6 minutes on each side, depending on your desired doneness.
  3. Rest the steak: After grilling, remove the steak from the heat and let it rest for a few minutes.
  4. Assemble the bowls: Start by adding a base of cooked rice or quinoa in a bowl, followed by black beans, corn, diced onion, and avocado. Top with sliced steak.
  5. Serve and enjoy: Add a sprinkle of additional cilantro and serve with lime wedges.
