A delightful blend of seasonal vegetables that brings the essence of France to your table.


Ingredients

  • 1 large eggplant, diced
  • 2 medium zucchinis, sliced
  • 1 bell pepper, diced
  • 2 cups tomatoes, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1/4 cup olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the diced onion and minced garlic, and sauté until they become translucent.
  2. Toss in the diced eggplant and cook for about 5 minutes until it begins to soften.
  3. Next, stir in the sliced zucchini and diced bell pepper, cooking for another 5 minutes until the vegetables are tender.
  4. Add the chopped tomatoes, dried thyme, dried basil, salt, and pepper to the skillet.
  5. Reduce the heat to low, cover the skillet, and let the mixture simmer for about 20 minutes, stirring occasionally.
  6. Once the vegetables become tender and the flavors meld beautifully, remove the skillet from heat.
  7. Serve warm, garnished with fresh basil for an aromatic finish.

Notes

For a kick, add crushed red pepper. Ratatouille can also be roasted as an alternative preparation.
