Ingredients

  • 1 cup carrots, sliced
  • 1 pound chicken breast, diced
  • 4 cups chicken broth
  • 1 teaspoon olive oil
  • Salt and pepper to taste
  • Optional: herbs like thyme or parsley for seasoning

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced chicken and cook until browned, stirring occasionally.
  3. Add the celery, carrots, and mushrooms; sauté for about 5 minutes until the veggies soften.
  4. Pour in the chicken broth and add the chopped kale. Bring everything to a boil.
  5. Once boiling, reduce the heat and let it simmer for 20-30 minutes.
  6. Season with salt, pepper, and any herbs you like. Serve warm and enjoy!
