Description
A delightful and easy-to-make toast featuring creamy cottage cheese and ripe avocado, perfect for breakfast or lunch.
Ingredients
Scale
- 1 egg
- 2 slices of bread (sourdough, whole wheat, or your favorite)
- ½ ripe avocado
- ½ cup cottage cheese
- ⅛ teaspoon paprika
- ⅛ teaspoon salt
- ⅛ teaspoon black pepper
- 1 teaspoon Dijon mustard
- 1 tablespoon sliced green onion
- Everything-but-the-bagel seasoning
- 1 tablespoon hemp seeds
Instructions
- Hard-Boil the egg: Start by placing the egg in a small pot, covering it with cold water. Bring it to a boil. Once it boils, cover the pot, remove it from the heat, and let it sit for 9-12 minutes. Transfer the egg to ice water to cool, then peel it.
- Toast the bread: Pop the bread slices in the toaster until they turn golden brown and crispy.
- Make the cottage cheese avocado mix: In a bowl, mash the avocado with the cottage cheese and the chopped hard-boiled egg. Stir in the paprika, salt, black pepper, Dijon mustard, and sliced green onion.
- Assemble the toast: Spread the mixture generously on the toasted bread. Sprinkle everything-but-the-bagel seasoning and hemp seeds on top.
- Serve: Enjoy your fresh, crispy toast immediately.
Notes
Best served fresh, but the mixture can be stored in the fridge for up to 2 days. Toast bread to regain crunch when serving leftovers.
