Ingredients

- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cans (14.5 ounces each) diced tomatoes
- 1 cup vegetable broth
- 1 teaspoon sugar
- Salt and pepper to taste
- 1/4 cup fresh basil, chopped
- 1/2 cup heavy cream (optional)
Instructions
- Heat the olive oil in a large pot over medium heat. Once it’s hot, add the chopped onion and minced garlic. Sauté them for about 3-4 minutes until they turn translucent.
- Stir in the diced tomatoes along with the vegetable broth. Add in the sugar, a pinch of salt, and some pepper to taste. Bring everything to a gentle boil, then reduce the heat and let it simmer for about 20 minutes.
- Remove the pot from heat and stir in the freshly chopped basil. If you prefer a smooth texture, blend the soup until creamy.
- Return the blended soup to the pot and stir in the heavy cream. Heat it through gently before serving warm.
Notes
Serve with grilled cheese sandwiches, crusty bread, or a side salad. Store leftovers in an airtight container for 3-4 days in the fridge, or freeze for up to 2-3 months.
