Description

A comforting and nostalgic tomato basil soup that’s easy to make and perfect for any occasion.


Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cans (14.5 ounces each) diced tomatoes
  • 1 cup vegetable broth
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • 1/4 cup fresh basil, chopped
  • 1/2 cup heavy cream (optional)

Instructions

  1. Heat the olive oil in a large pot over medium heat. Once it’s hot, add the chopped onion and minced garlic. Sauté them for about 3-4 minutes until they turn translucent.
  2. Stir in the diced tomatoes along with the vegetable broth. Add in the sugar, a pinch of salt, and some pepper to taste. Bring everything to a gentle boil, then reduce the heat and let it simmer for about 20 minutes.
  3. Remove the pot from heat and stir in the freshly chopped basil. If you prefer a smooth texture, blend the soup until creamy.
  4. Return the blended soup to the pot and stir in the heavy cream. Heat it through gently before serving warm.

Notes

Serve with grilled cheese sandwiches, crusty bread, or a side salad. Store leftovers in an airtight container for 3-4 days in the fridge, or freeze for up to 2-3 months.
