Ingredients

- 2 celery stalks, diced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 can diced tomatoes
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- Salt and pepper to taste
- 2 cups mixed vegetables (e.g., green beans, peas, corn)
- 1 cup spinach or kale
Instructions
- Heat the olive oil in a large pot over medium heat. Add the onion, carrots, and celery; sauté until softened, about 5 minutes.
- Stir in the garlic and cook for an additional minute.
- Pour in the vegetable broth and diced tomatoes, followed by the thyme, basil, salt, and pepper. Bring to a boil.
- Reduce heat and let everything simmer for 15 minutes.
- Add the mixed vegetables and spinach or kale; simmer for another 5-10 minutes until all the veggies are tender.
- Adjust seasoning if necessary and serve hot.
Notes
This soup is customizable with various vegetables and can be stored in the fridge for up to 4 days or frozen for 2-3 months.
