Ingredients

  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 cups mixed vegetables (e.g., green beans, peas, corn)
  • 1 cup spinach or kale

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the onion, carrots, and celery; sauté until softened, about 5 minutes.
  2. Stir in the garlic and cook for an additional minute.
  3. Pour in the vegetable broth and diced tomatoes, followed by the thyme, basil, salt, and pepper. Bring to a boil.
  4. Reduce heat and let everything simmer for 15 minutes.
  5. Add the mixed vegetables and spinach or kale; simmer for another 5-10 minutes until all the veggies are tender.
  6. Adjust seasoning if necessary and serve hot.
