- 8 oz fettuccine pasta
- 2 tablespoons olive oil
- 2 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Cook the fettuccine pasta according to package instructions, adding salt to the water.
- Reserve about a cup of pasta water before draining the fettuccine.
- Heat the olive oil in a large skillet over medium-high heat. Season the chicken with salt and pepper.
- Add the chicken to the skillet and cook for 6-7 minutes on each side until golden brown.
- Remove the chicken from the skillet and let it rest before slicing.
- Add minced garlic to the same skillet and sauté for about 30 seconds until fragrant.
- Pour in the heavy cream and bring to a gentle simmer.
- Whisk in the Parmesan cheese until the sauce is thick and creamy, seasoning with salt and pepper to taste.
- Toss the cooked fettuccine into the sauce and adjust consistency with reserved pasta water as needed.
- Slice the cooked chicken, add it on top of the pasta, and garnish with parsley before serving.
Notes
For a touch of elegance, consider topping with extra Parmesan or freshly cracked black pepper.
