- 2 cups cooked chicken (fresh, leftover, or rotisserie)
- 1 cup cheddar cheese, shredded
- 4 ounces cream cheese, softened
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 can diced tomatoes
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 tablespoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Tortilla chips for serving
- Fresh cilantro for garnish
Instructions
- In a large pot or Crock Pot, combine the cooked chicken, cheddar cheese, cream cheese, chopped onion, minced garlic, chicken broth, diced tomatoes, black beans, corn, chili powder, cumin, and season everything with salt and pepper.
- If you’re using the stove, bring the mixture to a boil over medium-high heat. Then, lower the heat and let it simmer for about 20 minutes, stirring occasionally.
- If you’re feeling leisurely and using a Crock Pot, cook the mix on low for 6-8 hours or on high for 3-4 hours.
- Serve the soup hot, generously topped with crispy tortilla chips and a sprinkle of fresh cilantro.
Notes
For extra creaminess, stir in additional cream cheese or heavy cream just before serving.
