Description

A rich and creamy chicken dish made in the crockpot, filled with sun-dried tomatoes and fresh spinach. Perfect for busy weeknights!


Ingredients

  • 4 boneless skinless chicken breasts
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup fresh spinach
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Grated Parmesan cheese (for topping)

Instructions

  1. Place the chicken breasts at the bottom of the crockpot.
  2. In a separate bowl, mix together the heavy cream, chicken broth, sun-dried tomatoes, garlic powder, Italian seasoning, salt, and pepper.
  3. Pour the mixture over the chicken, ensuring each piece is well coated.
  4. Cover the crockpot and cook on low for 6-8 hours or on high for 4 hours.
  5. About 30 minutes before serving, add the fresh spinach into the crockpot and stir.
  6. Serve hot, topped with grated Parmesan cheese.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 3 months. Add extra chicken broth if the sauce thickens.
