Description

A refreshing and easy recipe for creamy cucumber sandwiches, perfect for lunch or gatherings.


Ingredients

  • 1 cucumber, thinly sliced
  • 8 slices of whole-grain bread
  • 4 oz cream cheese, softened
  • 2 tbsp fresh dill, chopped
  • Salt and pepper to taste
  • Lettuce leaves (optional)

Instructions

  1. Mix the softened cream cheese with chopped dill, adding salt and pepper to taste.
  2. Spread the cream cheese mixture evenly on one side of each bread slice.
  3. Add thin cucumber slices over four of the bread slices.
  4. Lettuce layers can be added on top of the cucumbers for extra crunch.
  5. Top with the remaining bread slices, cream cheese side down, and press gently.
  6. Cut the sandwiches diagonally and arrange them on a platter.

Notes

Serve with a light salad, chips, or fresh fruit. Store leftovers in the fridge for up to 2-3 days.
