A refreshing and easy recipe for creamy cucumber sandwiches, perfect for lunch or gatherings.

- 1 cucumber, thinly sliced
- 8 slices of whole-grain bread
- 4 oz cream cheese, softened
- 2 tbsp fresh dill, chopped
- Salt and pepper to taste
- Lettuce leaves (optional)
Instructions
- Mix the softened cream cheese with chopped dill, adding salt and pepper to taste.
- Spread the cream cheese mixture evenly on one side of each bread slice.
- Add thin cucumber slices over four of the bread slices.
- Lettuce layers can be added on top of the cucumbers for extra crunch.
- Top with the remaining bread slices, cream cheese side down, and press gently.
- Cut the sandwiches diagonally and arrange them on a platter.
Notes
Serve with a light salad, chips, or fresh fruit. Store leftovers in the fridge for up to 2-3 days.
