- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- Salt and pepper to taste
- 4 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 2 cups cooked rice
- 1 cup broccoli florets, steamed
- 1 tablespoon chopped fresh parsley for garnish
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
- Season the chicken pieces with salt and pepper, add them to the skillet, and cook for about 6-8 minutes until they’re fully cooked and golden brown. Remove the chicken from the skillet and set it aside on a plate.
- Add the remaining olive oil to the same skillet and sauté the minced garlic for about 1 minute until it’s fragrant.
- Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet, and let it simmer for 2-3 minutes.
- Stir in the heavy cream and Parmesan cheese, cooking until the sauce thickens for about 3-4 minutes.
- Add the Italian seasoning, and then return the chicken to the skillet, coating it in the creamy sauce and heating through for another 2-3 minutes.
- Serve the chicken and sauce over the cooked rice, topped with steamed broccoli, and garnish with fresh parsley.
