  • Freshly cracked black pepper (to taste)
  • 2 tablespoons olive oil (divided)
  • 1 lb spaghetti
  • 6 cloves garlic (finely minced)
  • 1 whole lemon (zested and juiced, about 3 tbsp juice)
  • 1.5 cups heavy cream
  • 1/2 cup freshly shaved Parmesan cheese
  • 1/2 cup reserved pasta water
  • Fresh parsley (chopped, for garnish)
  • Lemon wedges (for serving)

Instructions

  1. Cook the spaghetti: Begin by bringing a large pot of salted water to a boil. Cook your spaghetti until al dente for about 8-9 minutes. Remember to reserve 1/2 cup of the pasta water before draining the spaghetti.
  2. Prepare the chicken: Slice the chicken breasts into thinner cutlets for quicker cooking and let them rest at room temperature for about 15-20 minutes.
  3. Dredge the chicken: In a shallow bowl, combine the flour, 1 teaspoon of Italian seasoning, lemon pepper seasoning, salt, and pepper. Dredge each chicken cutlet in the mixture.
  4. Cook the chicken: Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the chicken and cook for about 3-4 minutes on each side until golden brown.
  5. Make the sauce: Lower the heat to medium and add the remaining tablespoon of olive oil. Toss in the minced garlic and remaining Italian seasoning.
  6. Add lemon and cream: Mix in the lemon zest, fresh lemon juice, and heavy cream. Stir and let the sauce thicken for about 2-3 minutes.
  7. Incorporate the cheese: Add the freshly shaved Parmesan cheese into the sauce and stir until it melts.
  8. Combine with pasta: Add the reserved spaghetti into the sauce, tossing to coat. Use reserved pasta water if needed.
  9. Finish with chicken: Slice the cooked chicken into strips and return it to the pan, stirring gently.
