These Creamy Mustard Roasted Potatoes are perfectly crispy on the outside, tender on the inside, and coated in a tangy, creamy Dijon sauce a flavorful side dish that pairs beautifully with roasted meats or grilled veggies.
Ingredients
2 lbs baby potatoes, halved
2 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1 tsp garlic powder
2 tbsp Dijon mustard
1 tbsp whole grain mustard
1/3 cup sour cream or Greek yogurt
1 tbsp honey
1 tbsp fresh lemon juice
2 tbsp chopped parsley (for garnish)
Instructions
1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
2. In a large bowl, toss the halved potatoes with olive oil, salt, pepper, and garlic powder until evenly coated.
3. Spread potatoes in a single layer on the prepared baking sheet.
4. Roast for 30–35 minutes, flipping halfway through, until golden brown and tender.
5. While the potatoes roast, whisk together Dijon mustard, whole grain mustard, sour cream (or Greek yogurt), honey, and lemon juice in a small bowl.
6. When potatoes are done, transfer them to a mixing bowl and toss gently with the creamy mustard sauce.
7. Taste and adjust seasoning with extra salt or lemon juice if desired.
8. Garnish with chopped parsley and serve warm.
Notes
For extra crispiness, don’t overcrowd the baking sheet — give the potatoes space to roast evenly.
Add a pinch of smoked paprika or cayenne for a subtle heat.
These potatoes are excellent served with roasted chicken, grilled salmon, or even on a salad.
