Ingredients
- Jumbo pasta shells
- Seafood mix (shrimp, scallops, crabmeat)
- Ricotta cheese
- Cream cheese
- Mozzarella cheese
- Parmesan cheese
- Garlic
- Onion
- Spinach
- Fresh dill
- Fresh parsley
- Salt
- Pepper
- Marinara sauce
Instructions
- Preheat your oven to 375°F (190°C).
- Cook the jumbo pasta shells according to package instructions until they’re al dente. Drain and set aside.
- In a skillet, sauté garlic and onion over medium heat until translucent (about 2-3 minutes).
- Add the seafood mix to the skillet and cook until just done, being careful not to overcook it.
- In a large bowl, combine ricotta cheese, cream cheese, half of the mozzarella, spinach, fresh herbs, cooked seafood, salt, and pepper. Mix until well combined.
- Stuff each cooked shell with the seafood mixture.
- Spread a layer of marinara sauce on the bottom of your baking dish.
- Arrange the stuffed shells on top of the sauce. Cover them with the remaining marinara sauce.
- Sprinkle the remaining mozzarella and Parmesan cheese on top.
- Bake for 20-25 minutes, or until bubbly and golden brown.
- Serve hot, optionally garnished with parsley or lemon juice.
Notes
For leftovers, store in an airtight container in the fridge for up to three days. You can freeze these before baking for up to three months.
