- 8 oz spaghetti or fettuccine
- 1 cup ripe tomatoes (diced)
- 1 cup heavy cream
- 4 cloves fresh garlic (minced)
- 2 tbsp extra virgin olive oil
- 1/4 cup fresh basil (chopped)
- Salt and pepper to taste
Instructions
- Boil salted water in a large pot and cook the pasta according to package instructions until al dente. Once cooked, drain the pasta and set it aside.
- In a large skillet, heat the olive oil over medium heat. Sauté the minced garlic until it turns golden brown.
- Add the diced tomatoes, salt, and pepper to the skillet. Let it simmer for about 5 minutes to allow the flavors to blend.
- Lower the heat and stir in the heavy cream. Mix until well blended.
- Toss the cooked pasta in the sauce, making sure it is evenly coated.
- Serve the pasta topped with fresh basil and, if you like, some grated Parmesan cheese.
Notes
Store leftovers in an airtight container in the refrigerator for up to three days. Reheat with a splash of cream or water.
