Instructions
- Start by heating the olive oil in a large pot over medium heat.
- Add the chopped onion, diced carrots, and diced celery to the pot. Sauté these vegetables for about 5 minutes until they soften and begin to release their aromas.
- Next, stir in the minced garlic and cook for an additional minute until it becomes fragrant.
- Pour in the vegetable broth, bring everything to a boil, and then reduce the heat.
- Add the assorted chopped vegetables to the pot and let them simmer until tender, which should take about 10 to 15 minutes.
- Once the vegetables are tender, stir in the heavy cream and shredded cheese. Cook everything together until the cheese melts and the mixture becomes creamy and delicious.
- Season with salt and pepper to taste, then garnish your soup with fresh herbs before serving.
Notes
For a lighter soup, reduce the amount of cream or use plant-based milk. Leftovers can be stored in the fridge for 3 to 4 days or frozen for 2 to 3 months.
