Description
Tender chicken breasts marinated in tangy pickle juice and coated in a crispy breadcrumb and Parmesan crust.
Ingredients
Scale
- 4 boneless, skinless chicken breasts
- 1 cup dill pickle juice (from a jar of pickles)
- 1 cup seasoned breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/2 cup all-purpose flour
- 2 large eggs, whisked
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp paprika
- Salt and pepper, to taste
- Cooking oil, for frying
Instructions
- Marinate the chicken breasts in dill pickle juice for 30 minutes to 2 hours.
- Set up your breading station with flour, eggs, and the breadcrumb-Parmesan mixture.
- Pat the chicken dry after marinating, then coat each piece in flour, dip into the egg, and press into the breadcrumb mixture.
- Heat cooking oil in a skillet over medium-high heat and fry the chicken for 5 to 7 minutes on each side until golden brown and cooked through.
- Transfer the chicken to a wire rack to drain excess oil and let it rest before serving.
Notes
Ensure the oil is hot enough before frying to achieve a crispy texture. Adjust seasoning according to taste.
