Description

Tender chicken breasts marinated in tangy pickle juice and coated in a crispy breadcrumb and Parmesan crust.


Ingredients

  • 1 cup dill pickle juice (from a jar of pickles)
  • 1 cup seasoned breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup all-purpose flour
  • 2 large eggs, whisked
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • Salt and pepper, to taste
  • Cooking oil, for frying

Instructions

  1. Marinate the chicken breasts in dill pickle juice for 30 minutes to 2 hours.
  2. Set up your breading station with flour, eggs, and the breadcrumb-Parmesan mixture.
  3. Pat the chicken dry after marinating, then coat each piece in flour, dip into the egg, and press into the breadcrumb mixture.
  4. Heat cooking oil in a skillet over medium-high heat and fry the chicken for 5 to 7 minutes on each side until golden brown and cooked through.
  5. Transfer the chicken to a wire rack to drain excess oil and let it rest before serving.
