- 4 oz cream cheese, softened
- 1/4 cup almond flour
- 1/4 cup shredded mozzarella cheese
- 1 tablespoon erythritol or your preferred sweetener
- 1 teaspoon cinnamon
- 1/2 teaspoon vanilla extract
- 1 egg, beaten (for egg wash)
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the softened cream cheese, almond flour, erythritol, cinnamon, and vanilla extract. Mix until smooth.
- In a separate bowl, melt the shredded mozzarella cheese in the microwave for about 30 seconds until gooey, then add it to the cream cheese mixture and stir until combined.
- Scoop portions of the mixture and shape them into thin, flat rectangles on the baking sheet.
- Brush the rectangles with the beaten egg to add a shiny finish.
- Bake for about 12-15 minutes until golden brown and crispy, then let them cool slightly before serving.
