Crispy Sweet Potato and Red Lentil Patties

Description

Delicious and healthy patties made with sweet potatoes and red lentils, served with a creamy avocado cilantro sauce.


Ingredients

  • 2 medium sweet potatoes
  • 1 cup red lentils
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 tablespoons flour (or gluten-free flour)
  • Oil for frying
  • 1 avocado
  • 1/4 cup fresh cilantro
  • 2 tablespoons lime juice
  • Salt to taste

Instructions

  1. Peel and cube the sweet potatoes. Boil in water until tender, then drain and mash until smooth.
  2. Rinse the red lentils and cook in fresh water until soft, about 15-20 minutes.
  3. Mix together the mashed sweet potatoes, cooked lentils, chopped onion, minced garlic, cumin, salt, pepper, and flour until well combined.
  4. Shape the mixture into patties, making them as big or small as desired.
  5. Heat oil in a skillet over medium heat and fry the patties until golden brown on both sides, about 3-4 minutes per side.
  6. Blend the avocado, cilantro, lime juice, and a pinch of salt until smooth for the sauce.
  7. Serve the warm patties with the avocado cilantro sauce, either drizzled on top or on the side for dipping.

Notes

For extra crunch, coat the patties with breadcrumbs before frying. Customize by adding vegetables or spices for added flavor.
