Instructions
- Cook the orzo pasta according to package instructions. Drain and let cool.
- In a large bowl, combine the cooled orzo, cucumber, cherry tomatoes, red onion, and parsley.
- In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Chill in the refrigerator for at least 30 minutes before serving. Serve cold as a refreshing side dish.
