- 1/4 cup fresh mint leaves
- 2 tablespoons lime juice
- 2 tablespoons honey or sugar
- 2 cups water
- Ice
Instructions
- In your blender, combine the cucumber, mint leaves, lime juice, and honey (or sugar).
- Blend everything until it’s smooth and well-combined.
- Once blended, strain the mixture into a pitcher using a fine mesh sieve.
- Add the 2 cups of water to your cucumber-mint juice and stir well.
- Serve over ice and garnish with additional mint leaves if desired.
