Instructions
- Preheat your oven to 350°F (175°C) and grease a cake pan.
- Melt the dark chocolate and butter together in a double boiler or microwave until smooth, stirring frequently to prevent burning.
- In a separate bowl, whisk the egg yolks with the granulated sugar and vanilla extract until the mixture becomes pale and creamy.
- Pour the melted chocolate mixture into the egg yolk mixture. Stir until well combined and smooth.
- In another bowl, beat the egg whites with a pinch of salt until stiff peaks form.
- Gently fold the beaten egg whites into the chocolate mixture.
- In a separate bowl, whip the heavy cream until soft peaks form.
- Fold the whipped cream into the chocolate mixture carefully until everything blends seamlessly.
- Pour the mixture into the prepared cake pan and refrigerate for at least 240 minutes or until fully set.
- Serve chilled, optionally garnished with whipped cream or chocolate shavings.
Notes
Use high-quality dark chocolate for best results. Room temperature eggs whip better, creating a lighter cake.
