- 150 g Dates
- 30 g Oats
- 3 tablespoons Cocoa powder (about 25 g)
- 60 g Walnuts (or any other nut variety)
- 1 teaspoon Vanilla extract
- 1 tablespoon Coconut oil
- ½ teaspoon Cinnamon
- Optional: a splash of water or plant-based milk
Instructions
- Start by pouring hot water over the dates in a bowl. Let them soak for about 10-15 minutes. After soaking, drain the water and squeeze the dates to remove any excess moisture.
- In a food processor, combine the soaked dates, oats, cocoa powder, walnuts, vanilla extract, coconut oil, and cinnamon. Blend everything until you get a dough-like consistency.
- If the mixture feels too sticky, add in more oats; if it’s too dry, splash a little water or plant-based milk into the mix.
- Roll the dough into about 10-12 small balls. You can enjoy them immediately or chill them in the fridge for about 30 minutes to firm up.
- Serve these delightful snacks as-is, or for a fun twist, roll them in shredded coconut, crushed nuts, or extra cocoa powder. Store them in an airtight container in the fridge for up to a week, or freeze for up to three months.
