Ingredients

- 2 cups sushi rice
- 2 1/2 cups water
- 1/2 lb tempura shrimp
- 1 cucumber, julienned
- 1 avocado, sliced
- 4 sheets nori
- 1/4 cup rice vinegar
- 1 tablespoon sugar
- 1 teaspoon salt
- Soy sauce for serving
- Wasabi for serving
Instructions
- Rinse the sushi rice under cold water until the water runs clear.
- Combine the rinsed rice and water in a pot and bring it to a boil.
- Reduce the heat and simmer, covered, for about 20 minutes.
- Remove from heat and let it sit for another 10 minutes.
- Mix the rice vinegar, sugar, and salt in a small bowl until fully dissolved.
- Fold this mixture into the cooked rice and cool to room temperature.
- Prepare the tempura shrimp according to the package instructions.
- Lay a sheet of nori on a bamboo sushi mat and spread a thin layer of sushi rice over it.
- Layer the tempura shrimp, cucumber, and avocado on top of the rice.
- Roll the sushi tightly using the bamboo mat, sealing the edge with a little water.
- Slice the sushi roll into bite-sized pieces.
- Serve with soy sauce and wasabi on the side.
Notes
Use a sharp knife for cleaner cuts and practice rolling for the best results.
