- 1 zucchini, diced
- 1 bell pepper, diced
- 1 cup mushrooms, sliced
- 2 cups spinach
- 2 cups ricotta cheese
- 2 cups mozzarella cheese, shredded
- 1 cup grated Parmesan cheese
- 2 cups marinara sauce
- 1 teaspoon dried basil
- 1 teaspoon garlic powder
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions; drain and set aside.
- Heat olive oil in a pan over medium heat and sauté zucchini, bell pepper, and mushrooms until tender.
- Add spinach and cook until wilted.
- Mix ricotta cheese with dried basil and garlic powder in a bowl.
