Ingredients

  • 9 lasagna noodles
  • 2 tablespoons olive oil
  • 1 zucchini, diced
  • 1 bell pepper, diced
  • 1 cup mushrooms, sliced
  • 2 cups spinach
  • 2 cups ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1 cup grated Parmesan cheese
  • 2 cups marinara sauce
  • 1 teaspoon dried basil
  • 1 teaspoon garlic powder

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions; drain and set aside.
  3. Heat olive oil in a pan over medium heat and sauté zucchini, bell pepper, and mushrooms until tender.
  4. Add spinach and cook until wilted.
  5. Mix ricotta cheese with dried basil and garlic powder in a bowl.
  6. Spread a layer of marinara sauce at the bottom of a baking dish.
  7. Layer 3 lasagna noodles, half the ricotta mixture, sautéed vegetables, a third of the mozzarella, and a bit more marinara. Repeat.
  8. Finish with the last layer of noodles, remaining marinara sauce, mozzarella, and Parmesan on top.
  9. Bake for 30-35 minutes, until golden and bubbly.
  10. Let cool for 10 minutes before slicing and serving.
