  • 2 tablespoons Dill (Fresh preferred over dried)
  • 2 tablespoons Lemon Juice (Brightens the sauce)

  • 1 teaspoon Paprika (Enhances flavor profile)
  • 1 cup Cucumber Substitute (Diced zucchini or bell pepper work)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the rice, chicken broth, salt, black pepper, and paprika in a large mixing bowl. Stir well to ensure the rice is evenly coated.
  3. Pour the rice mixture into a greased baking dish, spreading it out evenly.
  4. Place the chicken breasts on top of the rice. Drizzle olive oil over the chicken and season with a pinch more salt and pepper.
  5. Cover the baking dish with aluminum foil and bake for 25-30 minutes.
  6. Prepare your tzatziki sauce in another bowl by combining Greek yogurt, minced garlic, grated cucumber, dill, lemon juice, oregano, and salt.
  7. Remove the chicken from the oven, discard the foil, and stir everything. Return the dish to the oven and bake uncovered for an additional 10-15 minutes.
  8. Let it cool for a few minutes before serving. Spoon tzatziki sauce over each chicken breast and rice serving.

Notes

Covering the dish during initial baking helps keep the chicken moist. Squeeze excess moisture from the cucumber for a thicker tzatziki sauce.
