Description

Delightful East Coast shrimp rolls filled with fresh shrimp and creamy dressing, perfect for summer gatherings.

Ingredients

Scale
  • 1 pound shrimp, peeled and deveined
  • 1/4 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon Old Bay seasoning
  • Salt and pepper to taste
  • 4 hot dog rolls
  • Butter for toasting
  • Fresh herbs (like parsley or chives) for garnish

Instructions

  1. Cook the shrimp: Bring a pot of water to a boil. Carefully add the shrimp and watch as they transform into a beautiful pink hue in about 3-4 minutes. Once cooked, drain them and let them cool for a bit.
  2. Chop shrimp: After cooling, chop the shrimp into bite-sized pieces and place them in a mixing bowl.
  3. Prepare the dressing: In a separate bowl, mix together the creamy mayonnaise, zesty lemon juice, Dijon mustard, and Old Bay seasoning. Add a sprinkle of salt and pepper to taste.
  4. Combine everything: Add the chopped shrimp into the mayonnaise mixture. Stir it all together until the shrimp are well-coated and you have a gloriously rich shrimp salad.
  5. Toast the rolls: Heat a skillet over medium heat and add a generous pat of butter. Place the hot dog rolls in the skillet and toast them until they turn golden and crispy, about 2-3 minutes on each side.
  6. Assemble and serve: Fill the toasted rolls with your tasty shrimp mixture, and for a pop of color, garnish with fresh herbs. Serve immediately and watch everyone’s faces light up with joy!

Notes

Serve with a side of crispy fries or a light salad. Fresh shrimp is best, but frozen can be used if thawed properly.
