  • 1/2 onion (diced)
  • 1 tbsp garlic (minced)
  • 1.5 cups sharp cheddar (shredded)
  • 1.5 cups mozzarella (shredded)
  • Tortilla chips
  • Pickled jalapeño (for garnish)
  • Cilantro (for garnish)
  • 1.5 tbsp cumin
  • 1 tbsp oregano
  • 1/2 tbsp paprika
  • 1/2 tbsp chili powder
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 2 tbsp light soy sauce
  • 1 tsp sugar

Instructions

  1. Start with the cheese: shred both the sharp cheddar and mozzarella and mix them together. Set this cheesy mixture aside for later.
  2. Heat a large skillet over medium heat. Drizzle a little oil and add the diced onion. Sauté the onion for about 30 seconds until it starts to turn translucent. Then, add the minced garlic and cook for another minute.
  3. Add the ground beef to the skillet. Break up any clumps as it cooks. Once it’s about halfway cooked, sprinkle in the spices—cumin, oregano, paprika, chili powder, onion powder, and garlic powder. Stir everything together until it’s fragrant and well-combined.
  4. When the beef is cooked all the way through, drizzle the soy sauce and add the sugar. Mix everything well to ensure the beef is nicely seasoned.
  5. As an optional step, tilt the pan to collect the excess grease, then turn the heat down to medium-low.
  6. Sprinkle the shredded cheese over the beef mixture, cover the skillet, and let it melt for a few minutes.
  7. To serve, spread a generous amount of tortilla chips on a plate, then heap the cheesy beef mixture on top. Finish it off with pickled jalapeños and a sprinkle of fresh cilantro.

Notes

Use freshly shredded cheese for the best melting quality and customize spices to taste. Enjoy with salsa or guacamole.
