- 1.5 lbs whole carrots, peeled and sliced into 1/4–1/2 inch thick slices
- 2 tablespoons olive oil or avocado oil
- 3–4 tablespoons store-bought ranch seasoning
Instructions
- Preheat your oven to 425° F. Spray a baking sheet with cooking spray or line it with parchment paper to save on clean-up time.
- Place the sliced carrots into a mixing bowl and drizzle them with 2 tablespoons of olive oil. Lightly toss to coat all of the carrots in the oil.
- Sprinkle 3 tablespoons of ranch seasoning onto the carrots and toss to ensure they are evenly coated.
- Lay the seasoned carrots in a single layer on the baking sheet. Roast them in batches if necessary.
- Bake for 25 minutes until the carrots start turning golden brown with slightly crispy edges, stirring halfway.
- Remove the carrots from the oven and sprinkle on the remaining 1 tablespoon of ranch seasoning and a pinch of black pepper. Toss lightly.
- Serve warm and enjoy!
Notes
Cut carrots into uniform pieces for even roasting. Don’t overcrowd the baking sheet to ensure crispiness.
