Description

A quick and satisfying meal featuring ground turkey, crunchy cabbage, and aromatic spices, capturing the flavors of classic egg rolls without the frying.


Ingredients

  • 2 tablespoons olive oil (divided)
  • 1 pound ground turkey
  • 1 small sweet onion (finely diced)
  • 1 cup shredded carrots
  • 3 garlic cloves (finely minced)
  • 1 teaspoon finely minced fresh ginger
  • ¼ cup chicken broth
  • 1 small head cabbage (about 8 cups shredded)
  • 3 tablespoons soy sauce or tamari
  • 1 tablespoon rice vinegar
  • ¾ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon toasted sesame oil
  • Cooked white rice
  • Green onions (green parts only, thinly sliced)
  • Toasted sesame seeds
  • Sriracha Mayo (optional)

Instructions

  1. Heat one tablespoon of olive oil in a large skillet over medium heat.
  2. Add the ground turkey and cook until browned but not completely done, around 5 to 6 minutes.
  3. Push the turkey to one side and add the finely diced onion along with the remaining olive oil. Cook for 3 to 4 minutes until softened.
  4. Add the shredded carrots, minced garlic, and ginger; cook for another 2 minutes.
  5. Pour in the chicken broth and scrape the bottom of the pan to incorporate all that delicious flavor.
  6. Add the cabbage, soy sauce, rice vinegar, salt, and pepper; stir and cover. Cook on medium-low for 12 to 15 minutes until the cabbage is tender.
  7. Remove from heat, drizzle with the toasted sesame oil, and stir to combine.
  8. Serve over cooked white rice and garnish with green onions, sesame seeds, and sriracha mayo if desired.

Notes

Serve with crispy wontons or homemade egg rolls for extra crunch. Store leftovers in an airtight container in the refrigerator for 3 to 4 days or in the freezer for up to 3 months.
