Scale
- 1 can chickpeas, drained and rinsed
- 1 small onion, chopped
- 2 garlic cloves, minced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh cilantro, chopped
- 1 teaspoon cumin
- 1 teaspoon coriander

- Combine the chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, salt, and pepper in a food processor. Pulse until well combined but slightly chunky.
- Add flour to the mixture and mix until it holds together; add more flour if too wet.
- Shape the mixture into small patties or balls, compacting slightly.
- Spray the air fryer basket with olive oil and place the falafel in a single layer.
- Spray the tops of the falafel with more olive oil.
- Air fry for 10-12 minutes, flipping halfway through, until golden brown and crispy.

Notes
Don’t overprocess the mixture; keep it slightly chunky for better texture. Consider using soaked dried chickpeas for enhanced flavor.
