A vibrant Lebanese salad filled with fresh vegetables, aromatic herbs, and crispy pita chips.

- 2 low-carb pita bread
- 4 cups mixed greens (lettuce, arugula, etc.)
- 2 tomatoes, chopped
- 1 cucumber, diced
- 4 radishes, sliced
- 2 green onions, chopped
- 1/2 cup parsley, chopped
- 1/4 cup mint, chopped
- 2 tsp ground sumac
- 4 tbsp olive oil
- 2 tbsp lemon juice
- 1 tsp salt
- 1/2 tsp pepper
Instructions
- Start by cutting the low-carb pita bread into triangles. Preheat your oven to 375°F (190°C). Once it’s hot, toast the pita chips on a baking sheet until they’re crispy.
- While the pita chips are toasting, grab a large bowl and combine the mixed greens, chopped tomatoes, diced cucumber, sliced radishes, chopped green onions, parsley, and mint.
- In a small bowl, whisk together your dressing: olive oil, lemon juice, ground sumac, salt, and pepper.
- Drizzle the dressing over your salad and toss gently to coat all the ingredients evenly.
- Finish off by adding the toasted pita chips on top. Serve immediately to enjoy that lovely crunch!
Notes
For an extra flah, consider garnishing with herbs or toppings like feta cheese or olives.
