- 200g dark chocolate
- 100g hazelnut butter
- 2 tablespoons cocoa powder
- 3 egg whites
- 1 tablespoon honey or a sugar substitute
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Start by melting the dark chocolate in either a double boiler or microwave. If using the microwave, be sure to heat it in short bursts to avoid burning. Once melted, let it cool slightly.
- In a large bowl, combine the hazelnut butter, cocoa powder, honey, and vanilla extract. Mix everything together until smooth and well combined.
- In another bowl, whisk the egg whites with a pinch of salt until stiff peaks form. This will give the mousse its airy texture.
- Gently fold the melted chocolate into the hazelnut mixture. Be careful not to deflate the mixture; go slowly and combine well.
- Next, take the beaten egg whites and carefully fold them into the chocolate-hazelnut mixture until just combined. You want to keep that airy texture!
- Finally, spoon the mixture into serving dishes and refrigerate for at least two hours before serving. This will help it set beautifully.

Serve with crushed hazelnuts, fresh berries, whipped cream, or chocolate sauce for added flavor.
