A quick and delicious chicken teriyaki bowl featuring tender chicken, vibrant veggies, and a homemade teriyaki sauce, perfect for busy weeknights.

- 1 large chicken breast (about 8 oz), cubed
- 1 tbsp olive oil (divided)
- 1/2 cup carrots, sliced
- 1 cup broccoli, chopped
- 1 tsp garlic powder
- 1/2 tsp salt
- 1 cup brown or white rice
- Sesame seeds (for topping)
- Green onions, chopped (for topping)
- 1/2 cup water (for sauce)
- 1/2 tsp sesame oil
- 2 tbsp brown sugar or coconut sugar
- 1/4 cup soy sauce or coconut aminos
- 1 tsp honey
- 1 garlic clove, minced
- 1/2 tsp ginger paste or fresh ginger, minced
- 1 tbsp cornstarch
- 2 tbsp water (for cornstarch slurry)
Instructions
- Start by cooking the rice according to package directions. While the rice cooks, prepare the rest of the dish.
- Heat 1/2 tablespoon of olive oil in a large pan over medium heat. Add sliced carrots and chopped broccoli, seasoning them with garlic powder and salt. Cook for about 5 minutes until the vegetables are tender. Remove them from the pan and set them aside.
- In the same pan, heat the remaining 1/2 tablespoon of olive oil. Add the cubed chicken and cook for 3 minutes on one side until golden brown. Flip the chicken and cook for another 3 minutes until fully cooked and browned.
- In a separate bowl, mix together all the teriyaki sauce ingredients. Create a slurry with the cornstarch by mixing it with 2 tablespoons of water before adding it to the sauce.
- Pour the teriyaki sauce (including the slurry) into the pan with the cooked chicken. Cook until the sauce thickens, stirring frequently to ensure even coating.
- Assemble the bowl starting with rice, then adding the sautéed veggies, followed by the chicken teriyaki. Top with sesame seeds and green onions. Serve warm and enjoy!
Notes
Cut the chicken into even pieces for uniform cooking. Use the cornstarch slurry for a glossy teriyaki sauce.
