Delicious and easy-to-make Mediterranean Pinwheels filled with cream cheese, fresh veggies, and feta.
Ingredients

- 4 large flour tortillas
- 1 cup cream cheese, softened
- 1 cup baby spinach, chopped
- ½ cup sun-dried tomatoes, chopped
- ½ cup Kalamata olives, chopped
- ½ cup feta cheese, crumbled
- 2 tablespoons fresh basil, chopped
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Combine the softened cream cheese, lemon juice, and a sprinkle of salt and pepper in a mixing bowl. Mix until smooth.
- Add chopped spinach, sun-dried tomatoes, Kalamata olives, feta cheese, and fresh basil. Stir until well combined.
- Lay one tortilla flat and spread a layer of the cream cheese mixture, leaving a small border.
- Roll the tortilla tightly from one end, keeping the filling inside.
- Slice the rolled tortilla into 1-inch thick pinwheels.
- Place pinwheels cut-side up on a serving platter.
- Repeat with remaining tortillas.
- Serve immediately, or cover and refrigerate until ready to serve.
Notes
Avoid overfilling tortillas and use fresh ingredients for best results.
