Description

Delicious and easy-to-make Mediterranean Pinwheels filled with cream cheese, fresh veggies, and feta.


Ingredients

  • 4 large flour tortillas
  • 1 cup cream cheese, softened
  • 1 cup baby spinach, chopped
  • ½ cup sun-dried tomatoes, chopped
  • ½ cup Kalamata olives, chopped
  • ½ cup feta cheese, crumbled
  • 2 tablespoons fresh basil, chopped
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Combine the softened cream cheese, lemon juice, and a sprinkle of salt and pepper in a mixing bowl. Mix until smooth.
  2. Add chopped spinach, sun-dried tomatoes, Kalamata olives, feta cheese, and fresh basil. Stir until well combined.
  3. Lay one tortilla flat and spread a layer of the cream cheese mixture, leaving a small border.
  4. Roll the tortilla tightly from one end, keeping the filling inside.
  5. Slice the rolled tortilla into 1-inch thick pinwheels.
  6. Place pinwheels cut-side up on a serving platter.
  7. Repeat with remaining tortillas.
  8. Serve immediately, or cover and refrigerate until ready to serve.

Notes

Avoid overfilling tortillas and use fresh ingredients for best results.
