Delicious flourless brownies made with sweet potatoes for a fudgy, nutritious treat.
Ingredients

- 1 cup sweet potato (cooked and mashed, about 1 medium sweet potato)
- 2 tsp vanilla extract
- 1/2 cup pure maple syrup
- 1 + 1/2 tbsp coconut oil (melted)
- 1/4 cup peanut butter
- 1 egg
- 1/3 cup cocoa powder
- 1 tsp baking powder
- 1/2 tsp salt
- 2/3 cup oat flour
- 1/2 cup chocolate chips
- 1/2 cup walnuts (chopped)
- 1/2 cup mini marshmallows
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the cooked and mashed sweet potato, vanilla extract, pure maple syrup, egg, peanut butter, and melted coconut oil. Stir until smooth.
- In another bowl, mix the cocoa powder, baking powder, salt, and oat flour.
- Slowly add the dry mixture to the wet ingredients, stirring until combined.
- Add the chocolate chips, walnuts, and mini marshmallows, mixing to combine.
- Pour the batter into a greased 8×8-inch baking pan.
- Bake for 22-28 minutes, or until the top is slightly browned and a toothpick comes out clean.
- Let cool before serving.
Notes
Serve warm with vanilla ice cream for a decadent dessert, and store leftovers in an airtight container for up to a week.
