Description

Delicious flourless brownies made with sweet potatoes for a fudgy, nutritious treat.


Ingredients

  • 1 cup sweet potato (cooked and mashed, about 1 medium sweet potato)
  • 2 tsp vanilla extract
  • 1/2 cup pure maple syrup
  • 1 + 1/2 tbsp coconut oil (melted)
  • 1/4 cup peanut butter
  • 1 egg
  • 1/3 cup cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2/3 cup oat flour
  • 1/2 cup chocolate chips
  • 1/2 cup walnuts (chopped)
  • 1/2 cup mini marshmallows

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the cooked and mashed sweet potato, vanilla extract, pure maple syrup, egg, peanut butter, and melted coconut oil. Stir until smooth.
  3. In another bowl, mix the cocoa powder, baking powder, salt, and oat flour.
  4. Slowly add the dry mixture to the wet ingredients, stirring until combined.
  5. Add the chocolate chips, walnuts, and mini marshmallows, mixing to combine.
  6. Pour the batter into a greased 8×8-inch baking pan.
  7. Bake for 22-28 minutes, or until the top is slightly browned and a toothpick comes out clean.
  8. Let cool before serving.

Notes

Serve warm with vanilla ice cream for a decadent dessert, and store leftovers in an airtight container for up to a week.
