- 1 package rice paper spring roll wrappers
- 1 (5 oz.) bag baby spring lettuces
- 1 red bell pepper, cut into strips
- 1 hothouse cucumber, sliced
- 1 avocado, peeled and sliced
- 1 cup shredded carrots
- 1 cup thinly sliced purple cabbage
- Fresh mint and basil (Thai basil recommended)
- 1 recipe Simple Thai Peanut Sauce
Instructions
- Fill a wide bowl with warm water. Soak one rice paper wrapper for 5-10 seconds, then let any excess water drip off.
- Place a handful of spring mix on one end of the wrapper, followed by your desired veggies and herbs.
- Wrap the rice paper around the filling tightly, folding in the sides like a burrito.
- Seal the roll and repeat until all your ingredients are used up.
- Store the rolled spring rolls covered in the refrigerator until you’re ready to eat. Cut them in half for serving alongside your Simple Thai Peanut Sauce.
Notes
Soak the wrappers for only 5-10 seconds for best results. Use fresh ingredients and roll tightly but carefully.
