A light and fulfilling salad bursting with the fresh flavors of strawberries, grilled chicken, and a homemade dressing.

- 4 cups baby spinach
- 1 cup strawberries, sliced
- 1 grilled chicken breast, sliced
- 1/4 cup red onion, thinly sliced
- 1/4 cup crumbled feta cheese
- 1/4 cup sliced almonds, toasted
- Optional: avocado slices or cucumbers
- 2 tablespoons balsamic vinegar
- 2 tablespoons olive oil
- 1 tablespoon honey or maple syrup
- 1 teaspoon Dijon mustard
- 1 teaspoon poppy seeds
- Salt & pepper to taste
Instructions
- Start by grilling the chicken breast. Season it generously with salt, pepper, and a little olive oil. Grill until it reaches an internal temperature of 165°F. Once done, let it rest for a few minutes and then slice it.
- While the chicken is grilling, prepare the dressing. In a small bowl, whisk together balsamic vinegar, olive oil, honey or maple syrup, Dijon mustard, and poppy seeds. Season it with salt and pepper to your liking.
- In a large bowl, layer the baby spinach, followed by the sliced strawberries, red onion, grilled chicken, crumbled feta cheese, and toasted sliced almonds.
- Drizzle your homemade dressing over the top of the salad and toss gently to ensure everything mixes well.
- Serve immediately and enjoy this fresh and delightful meal!
