Description

A light and fulfilling salad bursting with the fresh flavors of strawberries, grilled chicken, and a homemade dressing.


Ingredients

  • 4 cups baby spinach
  • 1 cup strawberries, sliced
  • 1 grilled chicken breast, sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup crumbled feta cheese
  • 1/4 cup sliced almonds, toasted
  • Optional: avocado slices or cucumbers
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon Dijon mustard
  • 1 teaspoon poppy seeds
  • Salt & pepper to taste

Instructions

  1. Start by grilling the chicken breast. Season it generously with salt, pepper, and a little olive oil. Grill until it reaches an internal temperature of 165°F. Once done, let it rest for a few minutes and then slice it.
  2. While the chicken is grilling, prepare the dressing. In a small bowl, whisk together balsamic vinegar, olive oil, honey or maple syrup, Dijon mustard, and poppy seeds. Season it with salt and pepper to your liking.
  3. In a large bowl, layer the baby spinach, followed by the sliced strawberries, red onion, grilled chicken, crumbled feta cheese, and toasted sliced almonds.
  4. Drizzle your homemade dressing over the top of the salad and toss gently to ensure everything mixes well.
  5. Serve immediately and enjoy this fresh and delightful meal!
