Ingredients
- Rice paper wrappers
- Cooked shrimp
- Rice noodles
- Fresh mint leaves
- Crunchy lettuce
- Peanut hoisin sauce for dipping
Instructions
- Prepare the rice noodles according to the package instructions and then set them aside to cool.
- Grab a shallow dish and fill it with warm water. Dip a rice paper wrapper in the water for about 10 seconds until it softens.
- Lay the softened wrapper flat on a clean surface. Place your fillings—shrimp, rice noodles, mint leaves, and lettuce—on the bottom third of the wrapper.
- Fold the sides over the filling and roll tightly from the bottom to the top, making sure to keep the fillings tucked in.
- Repeat the process with the remaining ingredients. Serve your fresh spring rolls with peanut hoisin sauce for dipping.
Notes
Store leftovers in an airtight container in the fridge for 1-2 days. Serve fresh for the best texture.
