Ingredients

  • Rice paper wrappers
  • Cooked shrimp
  • Rice noodles
  • Fresh mint leaves
  • Crunchy lettuce
  • Peanut hoisin sauce for dipping

Instructions

  1. Prepare the rice noodles according to the package instructions and then set them aside to cool.
  2. Grab a shallow dish and fill it with warm water. Dip a rice paper wrapper in the water for about 10 seconds until it softens.
  3. Lay the softened wrapper flat on a clean surface. Place your fillings—shrimp, rice noodles, mint leaves, and lettuce—on the bottom third of the wrapper.
  4. Fold the sides over the filling and roll tightly from the bottom to the top, making sure to keep the fillings tucked in.
  5. Repeat the process with the remaining ingredients. Serve your fresh spring rolls with peanut hoisin sauce for dipping.

Notes

Store leftovers in an airtight container in the fridge for 1-2 days. Serve fresh for the best texture.
