Description

Ingredients

  • 3/4 cup oats
  • 1/2 tsp cinnamon
  • 1/4 cup almond butter
  • 34 tbsp honey
  • 1 tsp vanilla extract
  • 1 1/2 cups Greek yogurt
  • Berries of choice for topping

Instructions

  1. Mix the oats, cinnamon, almond butter, honey, and vanilla extract until it forms a sticky dough. If the mixture seems too dry, add more almond butter and honey until you reach the right consistency.
  2. Line a muffin pan with muffin liners.
  3. Spoon the granola dough into each cup, pressing firmly to form a solid base.
  4. Add a spoonful of Greek yogurt to each cup.
  5. Top with fresh berries and any leftover granola bits.
  6. Freeze the cups for at least four hours.
  7. Let them thaw for a few minutes before serving.

Notes

These cups can be stored in the freezer for up to three months, or in the fridge for 3-5 days. Let them sit out for a few minutes before serving to soften them.
