  • 1/2 teaspoon salt (for frosting)
  • 4 tablespoons whole milk (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with festive liners.
  2. Cream together the room temperature butter, oil, and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the vanilla extract.
  5. Whisk together the cake flour, salt, and baking powder in another bowl.
  6. Gradually add the dry ingredients to the wet mixture, alternating with buttermilk, starting and ending with flour.
  7. Fold in the rainbow sprinkles gently.
  8. Divide the batter evenly among the cupcake liners, filling each about two-thirds full.
  9. Bake for about 18-20 minutes or until a toothpick inserted in the center comes out clean.
  10. Allow the cupcakes to cool completely before frosting.
  11. Beat together the soft butter, powdered sugar, vanilla extract, salt, and whole milk until smooth and creamy to make the frosting.
  12. Frost the cooled cupcakes, adding more sprinkles on top if desired.
