Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake pan with festive liners.
- Cream together the room temperature butter, oil, and sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract.
- Whisk together the cake flour, salt, and baking powder in another bowl.
- Gradually add the dry ingredients to the wet mixture, alternating with buttermilk, starting and ending with flour.
- Fold in the rainbow sprinkles gently.
- Divide the batter evenly among the cupcake liners, filling each about two-thirds full.
- Bake for about 18-20 minutes or until a toothpick inserted in the center comes out clean.
- Allow the cupcakes to cool completely before frosting.
- Beat together the soft butter, powdered sugar, vanilla extract, salt, and whole milk until smooth and creamy to make the frosting.
- Frost the cooled cupcakes, adding more sprinkles on top if desired.
