Description

A heartwarming and flavorful side dish of crispy roasted baby potatoes seasoned with fresh garlic and herbs.


Ingredients

  • 1.5 lbs baby potatoes (or any waxy variety)
  • 3 tbsp olive oil
  • 3 cloves fresh garlic, minced
  • 2 tbsp fresh rosemary, finely chopped
  • 2 tbsp fresh thyme, finely chopped
  • 1 tsp salt
  • 1/2 tsp pepper

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash the baby potatoes under cold water to remove any dirt, and cut any larger ones in half.
  3. Combine olive oil, minced garlic, rosemary, thyme, salt, and pepper in a large bowl.
  4. Add the cut potatoes to the bowl and stir well to coat each piece.
  5. Transfer the seasoned potatoes to a baking sheet, arranging them in a single layer.
  6. Roast in the preheated oven for about 25-30 minutes, tossing them halfway through.
  7. Remove from the oven and garnish with extra salt or fresh herbs before serving.
