- 1.5 lbs baby potatoes (or any waxy variety)
- 3 tbsp olive oil
- 3 cloves fresh garlic, minced
- 2 tbsp fresh rosemary, finely chopped
- 2 tbsp fresh thyme, finely chopped
- 1 tsp salt
- 1/2 tsp pepper
Instructions
- Preheat your oven to 425°F (220°C).
- Wash the baby potatoes under cold water to remove any dirt, and cut any larger ones in half.
- Combine olive oil, minced garlic, rosemary, thyme, salt, and pepper in a large bowl.
- Add the cut potatoes to the bowl and stir well to coat each piece.
- Transfer the seasoned potatoes to a baking sheet, arranging them in a single layer.
- Roast in the preheated oven for about 25-30 minutes, tossing them halfway through.
- Remove from the oven and garnish with extra salt or fresh herbs before serving.
