Instructions
- In a large bowl, combine the diced chicken, cooked quinoa or rice, cherry tomatoes, cucumber, red onion, bell pepper, Kalamata olives, and parsley.
- Season the mixture with salt and pepper to taste. Toss everything together to meld the flavors nicely.
- In a separate bowl, mix together Greek yogurt, grated cucumber, minced garlic, lemon juice, and a pinch of salt to create a creamy tzatziki sauce.
- Serve the chicken mixture in bowls, topped with a generous dollop of tzatziki sauce. Optionally, sprinkle crumbled feta cheese on top for an extra touch of flavor.
